Super Quick and Easy Alfredo Sauce from Scratch

I used to shy away from Alfredo because it seemed a lot more complicated to make than meat sauce, but I realized that this recipe actually takes me about the same amount of time because I don’t have to cook the ground beef. You can serve it just as it is or you can add chicken, bacon, and/or broccoli. Whether you are looking for a way to make Alfredo sauce without heavy cream because you just don’t have any in the fridge tonight, or you are looking for a way to have less fat in the recipe, it definitely turns out just fine with either regular whole milk or half and half.

Ingredients

1 stick butter 

1/4 cup minced garlic 

2 tbs cornstarch or flour

1-2 cups combination of your dairy choice (half and half, whole milk, heavy cream, or a mix – you can alter this based on what you have in your fridge and how much fat you want. In a pinch you could even use skim milk or powdered milk.)

1-2 cups grated parmesan 

Dried parsley

In a large pan, melt the butter until it is sizzling. 

Add the garlic and toast for a few minutes. 

Add cornstarch/flour and whisk very fast until it is thick. 

Little by little add the milk, stirring as you go. Keep stirring as it heats and thickens. 

Add grated parmesan and stir until fully blended. 

Sprinkle in dried parsley, salt and pepper to taste. 

Serve over pasta with chicken or bacon, steamed broccoli, and garlic knots.

I buy minced garlic in a bulk sized jar because I use it for most meals and it takes too long to chop it all up

PARMESAN CHEESE

The fake Kraft Parmesan cheese works great, I’ve never tried real true Parmesan with this recipe

Heavy Cream, Half and Half, or Whole Milk work well for this recipe

Unsalted or salted, depending on your preference

how to Thicken alfredo sauce

If you find that your sauce is not thick enough, you can add a little more cornstarch. Start with 1 Tbs cornstarch and 1 Tbs water mixed together, and stir it into the hot sauce. Keep stirring it thoroughly. As it heats and blends together it will thicken. You can add more cornstarch and water mixture as you need but make sure you stir for a few minutes before adding more because it can suddenly become very thick.
